Dear readers, at first take my salam, Assalamualaikum.
I hope you all are well by the grace of Almighty Allah. Alhamdulillah, I am also well.

Today, I am going to describe about the thing what my district is famous for.
My district name is Natore. It is a norther district of Bangladesh. It is the district with an area of 1896.05 Square Kilometers surrounded by Bogra to the north, Sirajganj to the east, Pabna to the south, Rajshahi to the west and a portion of west-north  to Naogaon. Natore was declared as district on 4 February 1984.That's the brief introduction of my district Natore.

Well, if you ask, what is Natore famous for?
People then will puzzled that  what thing will come first in this regard.
Kachagolla and Banalata Sen are two famous thing and person respectively in Natore district.
Some one may say Natore is famous for Kachagolla. On the contrary Someone might say, Natore is famous for Banalata Sen.
Well, I am going to debate on the matter that Natore is famous for whether Kachagolla or Banalata Sen.
Today I would like to describe about Kachagolla. Another day I will come with Banalata Sen too.

Kachagolla is a kind of sweet which is made from Milk.
This special sweet had been invented about 250 years ago.
There is a hearsay about the history of it.

There was a confectioner named Modhusudan in Natore. He supplied his sweets to the Rajbari (The Home of King). One-day his all workers were absent due to their illness but he made casein from milk at night to make sweet in this morning. That day it was impossible to make sweet for him alone. Again, If he don't make sweet then the casein will unusable. So, he decided to make the casein warm with sugar's juice. After he did so, he had its taste and he was pleased with it's yemmy taste. He then sent the new item of sweet to the King's home with fearing.

The then King also became pleased with the new sweet's taste and asked, what is the name of this sweet? The confectioner  Modhusudon says it's name is Kachagolla as it is not soaked in hot oil.
Then the king ordered him to make this sweet everyday.

In 1760 at time of Rani Bhabani, the fame of Kachagolla spread all over the world.

People of Bangladesh and West Bengal in India are pond of Kanchagolla. Apart from they people who once had got taste of it he/she fallen in love on Kachagolla.

How to make Kachagolla?

Required ingredients:
1. Milk
2. Water
3. Sugar
4. Cardamon
5. Vinegar

At first mix milk and water in a saucepan and inflame it. When it is started boiling mix vibegar little by little and stir the mixer with cutty. After a while milk will started to congeal and green colored water will be separated.
Now make it cool and take the congealed milk in a silk cloth and wring the water from it.
Now its called casein or Sana in Bengali.

Now divide the casein into three portion.
Warm the two portion in a saucepan and mix sugar with it. When it turned into glue then mix the rest portion and stir them. Mix cardamon powder and keep it flaming. After a while stop flaming and make it fragile.
Your kachagolla is ready.
You no need to make round and roller shape.

If you go to Natore then you can see some vendors are selling Kachagolla in Buses and Trains. Don't buy from them if you don't want to be cheated.
To buy original kachagolla, you have to to Moucha Mistanno Vander, Kundu Mistanno Vander or Modhusudon Paler Dokan in Nichabajar, Natore.
If you once go to Natore then don't miss to have the taste of Natorer Kachagolla.
